I had the pleasure of meeting and having coffee with Mei Shih of the Mount Pleasant home-bakery, Pluff Cakes. I was so excited to hear about this little bakery, because Pluff Cakes are allergen-friendly! All of their cakes are free of dairy, soy, corn, all nuts, fish, and shellfish. Mei also offers several gluten free or vegan options. As the mommy of a little boy with food allergies, I know that finding baked goods that lend some normalcy to birthdays and special occasions can be tough!
Naturally, I had tons of questions and wanted to hear all about the process Mei uses to create these beautiful and delicious cakes! She was gracious to share her time and ideas with me.
Mei describes the process of learning allergen-friendly baking as one of trial and error. She would search the internet for ideas and allergen-free substitutions, then just go for it. Her kitchen became a miniature science lab. She would use a recipe’s worth of dry ingredients, then experiment with four or five milk-substitutes to find the one that would lend her cakes the right flavor and texture. Over the last several months, Mei has refined her recipe for icing, which she says was one of the more difficult components to perfect. When asked about her kitchen, Mei says she avoids cross-contamination by using completely separate utensils and a designated mixer for making her cakes. These never come in contact with 6 out of the 8 main allergens.
Pluff Cakes offers a variety of flavors including cinnamon roll, cardamom carrot cake, and Mei’s favorite, toasted black sesame chiffon cake, in addition to traditional chocolate or vanilla. I was able to sample the cinnamon roll and carrot cakes, and oh my good gracious they are yummy. These cakes are light and perfectly sweet. Excuse me while I lick my fingers. I would have photographed the samples for this post, but…well…they were eaten before I could.
